INTRO TO COFFEE
In this workshop you learn the history and context of speciality coffee and learn how to taste the diversity of different tasting coffees. From commercial coffee to some of the best coffees in the world. The workshop is aimed at beginners, no existing knowledge is required. Ideal for beginners wanting to start their journey in coffee. We will dive in the supply chain of coffee. Explore coffee at origin and basic principles of roasting and brewing. We will end the session with learning how to cup (taste) different coffees. This workshop is suggested as a pre-training to Barista Basics. You can combine this with Barista basics as a Barista package training. In this workshop you will learn: History of coffee Values and principles of Speciality coffee and the industry Supply chain Coffee at origin, different origin countries, varieties and processes and how they impact taste Basics of roasting and brewing Cupping (tasting) different coffees. BARISTA BASICS
In this workshop you will learn how to use an espresso machine to make all kinds of espresso and milk based drinks. The workshop is aimed at beginners, no existing knowledge is required but preferably you have attended our Intro to Coffee workshop. We cover some basic theoretical knowledge but mostly focus on the practical side of making great espressos and cappuccino's. In this workshop you will learn: How to use a semi automatic espresso machine (grind, tamp, extract, steam milk) How to make different drinks (espresso, long black, cappuccino, flat white) How to program the grinder and volumetrics to achieve the right recipe and taste How to steam microfoam milk and pour cappuccino's We use Sage machines so you can replicate your knowledge at home.

LATTE ART BEGINNERS
In this workshop you learn how to top off your cappuccinos and other milk drinks with beautiful latte-art patterns with creamy steamed milk. We first teach the correct handlings to steam and pour perfect micro foam and then move on to creating hearts, tulips and rosettas. In this workshop you will learn: How to stretch and aerate milk for perfect microfoam How to position your steamwand and pitcher How to pour and position your cup How to create contrast and have a symmetrical pattern How to pour a heart, tulip and rosetta

MASTERING ESPRESSO
In this workshop we study the mechanisms/physics behind espresso making and learn how to practically apply them to make better tasting espresso daily. We revisit extraction theory and all the individual components that determine your shot quality. We cover steaming for perfect microfoam and basic latte art patterns. This workshop requires a basic barista knowledge on the use of semi automatic espresso machines. Please check our Intro to Coffee and Barista Basics if you have no prior knowledge. In this workshop you will learn: Understanding extraction theory and TDS. How variables like water, temperature, dosage, yield, grind size, basket size & channeling impact coffee taste. How to manipulate these variables to create the perfect recipe for a given coffee. Tasting under and over extracted recipes to tweak and find the right tasting recipe.

MASTERING FILTER COFFEE
In this workshop we cover the basics of extraction theory and apply that to brewing recipes. You will learn how to brew better, more balanced, more flavorful, coffee at home. We work on pouring techniques during the different stages of a brew. We practice with multiple brewers (V60, Aeropress, Origami, etc) and learn the difference they make. In this workshop you will learn: The basics of extraction theory The impact of variables (such as grind size, water, dose/yield, time, etc) on your cup taste How to write and interprete a brewing recipe To apply the right pouring technique during different brew stages To use different brewers and understand their differences This workshop is open to everyone - no prior knowledge required. Good to have done Intro to Coffee for added knowledge.
